聖誕樹幹蛋糕 Bûche de Noël (Yule Log)

5 eggs at room temp. (separate egg white and egg yolks)

蛋糕體 Sponge Cake:
菜油 Vegetable oil 100毫升ml
可可粉 Cocoa Powder 28克g
牛奶 Milk 120毫升ml
細砂糖 Sugar 68克g
低筋麵粉 Cake flour 125克g
泡打粉 Baking powder 2克g
蘇打粉 Baking soda 2克g
5個 蛋黄(室溫) 5 egg yolks at room temp.
5顆蛋的蛋白(室溫) egg white of 5 eggs at room temp.
細砂糖 90克 Sugar 90g
額外糖粉, 可可粉 extra icing sugar and cocoa powder for dusting
內餡 Filing:
淡忌廉 Heavy cream 250毫升ml
糖粉 Icing sugar 65克g
1茶匙 teaspoon 即溶咖溶液 instant coffee
1/2茶匙teaspoon 雲喱拿香油 vanilla extract
外層 Frosting:
室温牛油 Butter at room temp. 50克g
糖粉 Icing sugar 130克g
可可粉 Cocoa powder 30克g
牛奶 Milk 2湯匙tablespoons
即溶咖啡溶液 instant coffee 1湯匙tablespoon
雲喱拿香油 vanilla extract ½茶匙teaspoon
